
A zero waste recipe for using carrot leaves or carrot thinnings

Ingredients
- olive oil
- carrot leaves or carrot thinnings
- nuts (almond/hazlenut/pine/cashew)
- Parmigiana cheese
- garlic
- Salt & Pepper
Instructions
- These are basic instructions for the Carrot Top Pesto so quantities can be adapted.
- Put a large handful of Carrot Tops or Carrot Thinnings in a food processor or blender.
- Add a clove of garlic and a small handful of nuts (use any nuts you have available).
- Add some grated cheese.
- Drizzle over some olive oil, blend, adding more oil as necessary until you get a thick paste.
- Season to taste with salt and freshly ground black pepper.
