Ingredients
  

  • olive oil
  • carrot leaves or carrot thinnings
  • nuts (almond/hazlenut/pine/cashew)
  • Parmigiana cheese
  • garlic
  • Salt & Pepper

Instructions
 

  • These are basic instructions for the Carrot Top Pesto so quantities can be adapted.
  • Put a large handful of Carrot Tops or Carrot Thinnings in a food processor or blender.
  • Add a clove of garlic and a small handful of nuts (use any nuts you have available).
  • Add some grated cheese.
  • Drizzle over some olive oil, blend, adding more oil as necessary until you get a thick paste.
  • Season to taste with salt and freshly ground black pepper.
